Sweet Chili Kumara and Cashew Salad with Telegraph Hill Hempseed Ginger Sesame Dressing
Ingredients
- 650g Orange kumara
- 1 Diced red onion
- 1 Diced red capsicum
* You can add Diced celery if you like it
- TH Extra Virgin Olive oil
- Sweet Chili sauce
- 1 can corn kernels
- 1 handful baby spinach
- 1 cup cashews
- Salt and Cracked pepper
- Telegraph Hill Hempseed Ginger Sesame Dressing
Instructions
- Toss vegetables through oil and season
- Roast at 220 degrees C for 15 minutes
- Drizzle roasting vegetables with Sweet Chili Sauce
- Roast a further 10 minutes, or until kumara cooked but still firm
- Leave to cool
- Mix through corn kernals, baby spinach and cashews to roasted vegetables
- Drizzle with Telegraph Hill Hempseed Ginger Sesame Dressing and gently mix.
- Serve cold and enjoy
*For smaller portions you can also pan fry vegetable mix.
