Green olives have a optimal time to pick. This is know as free stone, when the stone becomes free from the flesh. The test for this is to cut the olive around its girth, then gently with firm fingers twist the halves of the olive in opposite directions.
A clean separation means the olive is ready to pick and process. This is known as free stone.
The above picture shows the clean separation of the fruit from the stone. It is almost perfect, I'm giving this tree another week before picking.
